The Future of Culture Food: Lab-Grown Gelatin

The California-based company Gelator produced a vegan alternative to the protein collagen, which is used to produce gelatin, and is also found in several food products, cosmetics products and even in strings for musical instruments. The alternative collagen was produced in a lab using a fermentation process (similar to beer production), and the end result can be liquid or powder. For now, the company focuses on producing collagen for the cosmetics and personal care markets, but in the future they plan to expand to the food and drugs industries.
